Kikusakari Taru Sake

I absolutely love this sake. I know, most traditionalists would look down their nose at that comment, and perhaps it's the memories I had of time spent in onsen baths in Japan, but the beautiful Japanese cedar that comes from slowly and gently aging the sake in cedar casks give it a subtler influence that even most oak influenced California wines. It adds a warmness that you can breathe in. Would cedar plank salmon be too much to pair with this taru sake? Perhaps, but smoked tomatoes with burrata and Thai basil might be just about perfect.
