The Grappa di Sassicaia is made by Jacopo Poli, who's Poli Distillerie was invited to assume production of the spirit in 1994. Founded in 1898 by Jacopo's grandfather, Giobatta Poli, Poli Distillerie has one of the oldest operating stills in Italy today. The Grappa di Sassicaia is made of the cabernet sauvignon and cabernet franc pomace from Tenuta San Guido. Aged for four years in French barrique before being diluted with distilled water, chilled and then filtered, this grappa displays both fruit and herb aromas characteristic of the two cabernet varieties with hints of mellowing toast and vanilla from the oak.
