This is York Creek's "flagship wine;" a blend of Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot in the style of the great red wines from Bordeaux. The 2005, a blend from seven individual vineyard blocks with different exposures and elevations ranging from 1500' to 2000', consists of 84% Cabernet Sauvignon, 9% Cabernet Franc, 5% Merlot, and 2% Petit Verdot. Rich, fruity and structured, this as an elegant "mountain Cabernet."

After the last few years I think just about everyone has heard us pontificating about just how good, and how insanely inexpensive, the York Creek wines are. Luckily for us and our thirsty customers Fritz Maytag kept deep cellars over the years and still has plenty of wine for us to sell. After the rousing success of the 1999 Meritage, which we sold almost 900 cases of, we bring two new wines to you from the fantastic 2005 vintage in Napa Valley. The 2005 Estate Cabernet Sauvignon was possibly my favorite wine in the most recent batch of wines tasted from this winery; I certainly thought it was the most crowd pleasing. With a nose packed full of red fruits, a pleasing minty/mountainous tone and a touch of Amaro-like herbal spice this is one complex and alluring nose. Supple, plush and broad on the palate, this Cab has worn its almost 10 years of age extremely well with little signs of oxidization or drying out in flavor. Perfectly ripe black currant, sweet-tinged pipe tobacco, sous bois and layers of super-fine tannin and a touch of vanilla from the oak are all wonderfully apparent in this long and completely drinkable wine. We don’t have nearly as much of this as we did the 1999 so I’d jump on this quick before it is never heard from again.

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.
