Do you consider yourself a super wine geek? You are not if you haven't tried Ambyth! This super small winery produce total of 1000 cases annually entirely out of his own garage, with vines surrounding his house co-existing with chickens, dogs, cats, sheep and cows. Everything is completely organic, biodynamic (I know, I know, you all heard that before) and..... wait for it.... 100% natural (HUH?) It means dry farm, hand picked, NO chemical added, NO sugar added, NO yeast added (wild yeast only), NO acid adjustment, NO sulfites added, NO finning and NO filtraion. You think you can handle all that? Lets raise the stakes by adding in the Australian owner with cool accent and amazing hospitality, oh and did I mention all the wines are fermented in amphora (hand made Italy clay pot)?
Rose Amphora, perhaps got its name from the darker ruby red almost clay color this rose possess. This is by no mean you everyday sip by the pool, juicy light rose at all. The aromas of intense earl grey tea, jasmine flower, tart cherry, and blood red roses come rushing through. Great acidity structure and high intensity. Definitely some clay/chalky notes on the finish and almost a touch of almond/peanut skin, incredibly unique and one of a kind!
