Vin Jaune is a wine like no other. Produced in only exceptional vintages when the Indian summer enables Savagnin to develop optimum ripeness, the wine then undergoes a most unique elevage: once fermented it must age in old oak barrels for at least 6 years without any topping up to replace the portion of wine that evaporates. This process takes place in seasoned Burgundy barrels in an attic space with the desired temperature fluctuations, and the style of the wine is intentionally somewhat maderized and oxidative. A thin layer of yeast, or voile, forms on the wines surface much like a flor, used in the makimg of fino sherries. The wine, which displays an unbelievable degree of richness and complexity is balanced by a fine acidity which enable these wines to last for many years! Deep golden in color, this dry wine is at once nutty and spicy, with aromas of golden raisins, resin, and ginger. Enjoy with an assortment of fine cheese.
