2005 Guiborat Fils Grand Cru Blanc de Blancs Champagne (Previously $60)

Produced by the Fouquet family, who have farmed parcels in Cramant since 1885. Current generation winemaker Richard Fouquet and wife Karine are now at the helm and farm 8 hectares of vineyards in Cramant, Chouilly and Mardeuil. Five hectares of their fruit is sold to Laurent Perrier for their production so Guiborat wine production is tiny. Farming is done with aggressive pruning and low yields. Vinification is done in Cramant with fermentation done in stainless steel. Some small lots are aged in neutral cooperage and are laid down in chalk caves. This particular bottling is clean and linear with great depth. Citrus flavors, nectarine and minerals on the palate. An excellent Champagne to drink now or to put in the cellar for a few years. This is a great new arrival that has the classic minerality and acidity of Blanc de Blanc Brut but, it also has interesting lemon curd nuance and a good dose of cream mid-palate. It will also age very well over the next 6+ years if you are so inclined. A great bubbly at a wroth-every-penny price.
