2011 Les Clos Perdus "l'Extreme" Vin de Pays des Côtes Catalanes Blanc (Previously $30)

L'Extreme Blanc is from a single vineyard. The 100-year-old vines grow on steep north facing shale. The variety is predominantly Grenache Gris with some Grenache Blanc. The grapes are pressed as soon as they arrive in the cellar. The freshly squeezed juice is run off and cooled to 5 degrees Celsius for 24 hours. During this process some oxidation of the juice was encouraged to allow for a more stable and complex final wine. The wine is fermented in 500 litre French oak where it remained for six months. The malolactic fermentation was avoided to retain the acid structure and support the rich body of the wine. A wine suited to a broad range of food, as it has the acid and minerality that sit well with seafood, while its weight and depth support rich vegetable and meat dishes. 13% abv.

Rich, but not overdone, the 2011 l'Extreme Blanc is a fantastic choice to pair with heartier fare that favors a white wine. Think truffle risotto, grilled asparagus or a cauliflower tian? Confit de Canard works great too. My favorite however would be a sautéed wild mushrooms served with a side of long grain rice and hearty winter kale.
