Ameztoi produces some of the tastiest, most representative and classic Txakoli: the delicious, bright, slightly petillant (fizzy), low alcohol wines that are consumed like water in Spanish Euskadi (Basque Country). Vineyards here are on hilly, sandy terrain a stone's throw from the sea, just outside the picturesque town of Getaria (Getariako is Basque for "from Getaria"). The primary grape variety is called Hondarribi Zuri, though a tiny bit of Hondarribi Beltza (a red variety vinified as a white, without skin contact) is blended in as well. Their 2011 Txakoli is full of juicy citrus and stone fruit, with a wonderful balance of juicy fruit, acidity and fizziness. For an authentic pairing, try grilling your favorite white fleshed fish with olive oil and sea salt, a perfect spring/summer combo!
