This is incredible Spanish olive oil, sourced by our friend Alex Elman. Alex Elman olive oil is produced from organically grown manzanilla cacareña olives near the intersection of the provinces of Cáceres and Salamanca, very close to the central part of Spain's western border with Porgual. The oil has wonderfully fresh, fruity, and slightly green flavor characteristics, but with none of the bitterness or extremly peppery qualities typical of Tuscan olive oils. I go through liters (gallons, actually!) of extra virgin olive oil every year, and I must say that I think I've found a new favorite for cooking, dipping and finishing; it's a versatile and delicious olive oil.
