The 2009 Cabernet Sauvignon is a beautiful wine. Floral notes are woven nicely throughout a core of explosive dark red fruit. Mint, spices and sweet tobacco wrap around the silky, floral-infused finish. The 2009 needs time to absorb its oak, but it appears to have enough density for that to happen. Crocker & Starr's Cabernet Sauvigon is made from old, heritage clone estate vines which are sustainably and organically farmed. This 100% Cabernet was fermented in small lots and aged for 20 months in 80% new French oak. From the winemaker: "This is a deep, dark, ruby black Cabernet... so dense in color we wonder if light can even permeate it! Black cherries, cassis, floral notes and spice are woven through a core of dark fruit, truffles, chocolate and minerality. Elegance & power find a beautiful equilibrium as the sweet tannins integrate into a luscious finish. This wine should age beautifully for 15-25 years."
