The Bornard 2007 Cotes du Jura Les Chassagnes Savagnin Ouille--topped-off for four years in foudre--finished with 14% alcohol and has the glycerin and breadth to prove it, though thankfully no heat or roughness on that account. In fact, this boasts wonderfully clear apple, white peach, orange and lemon that permit nuances of salt and stone, pepper and spice to show through to delightfully stimulating effect. Subtle nuttiness adds depth to the long finish. I suspect that in an ideal cellar (where sulfur-free wines belong) this could be worth following for the better part of a decade, and it will certainly prove versatile, and from my experience it certainly counts as especially impressive for its vintage.
