Produced from albarín (NOT albariño, albarín is another variety native to northern Spain), this Asturian wine from the up-and-coming Monasterio de Corias suggests dry Chenin (Savennieres, in particular) with its power, depth of flavor and salty mineral tang. Truly a unique wine, it has the power as well as the acidity to handle a variety of foods; most recently I had this with dim sum and it worked great, especially with the cooled, boiled chicken and gingery, chicken fat laced sauce (aka drunken chicken!)
