The 2011 Chablis Forets is layered with crushed rocks, saline notes, apricots and yellow stone fruits. It captures an attractive combination of minerality and fleshiness. Layers of fruit built to the creamy, expressive finish. Anticipated maturity: 2013+. (8/ 2012)
Patrick Piuze is a rising star negociant in Chablis, purchasing and making wines from grapes throughout Chablis under seventeen appellations at the village, 1er Cru and Grand Cru levels. Originally from Quebec, Patrick studied winemaking in Beaune and spent his first four years thereafter at Maison Olivier Leflaive, where he managed the full line of Chablis production. He moved on to further develop his talents as a winemaker with Jean-Marie Guffens at Verget and worked several vintages with Jean-Marc Brocard before striking out on his own in 2008. Patrick's winemaking is very hands-off or "laissez faire" in style; fermentations occur naturally with indigenous yeasts and he strives for as little intervention as possible in order to facilitate the truest expression of terroir in each wine.
