The reputation of the 2007 vintage continues to grow, and Heitz crafted this 100% Cabernet entirely from estate-grown grapes. It was barrel aged for three years and released a full five years after it was harvested. From the winery: "The rich varietal aroma leads to delicious flavors of dark cherry with notes of spicy plum. A generous core of Cabernet fruit is nicely integrated with refreshing acidity and just the right touch of oak. This wine is silky in texture, building momentum as it crosses the palate to a lovely, lingering finish."

Another great Cab from one of California's most iconic producers. Consisting of 100% estate fruit, it possesses that undeniable Heitz character we all love. I find this Cabs purity of fruit and freshness on the palate incredibly appealing.

I remember paying my first visit to the Heitz Cellars tasting room right off Hwy. 29 in 1978, one year after arriving in California. K&L was still running around in diapers when Joe Heitz greeted my youthful party with a friendly, knowing smile and open bottle of red that smelled of everything miraculous that I imagined about the Napa Valley and it's lustrous heritage. I've gone back a few times since then and Joe is long gone of course, but his lovely wines still reflect the studied, measured elegance and grace that he imbued in them: textbook, classic Napa Valley Cabernet Sauvignon, fragrant and focused, pure black fruit and gentle wood aging minus the over embellishments and excess weight that we often encounter from many new wave wineries. Joe Heitz knew exactly what he had way back when, so treat yourself to a bottle of polished, seriously beautiful Cabernet in his legacy.

Heitz Cellars has long been not only one of my personal favorite Cabernet producers in the Napa Valley, but in the entire world. Don’t believe me? Just ask one of my co-workers, I bet they would back me up 100% on this bold statement. Year after year they knock Cabernet out of the park in a style that is becoming near extinct, that is one that is not over-extracted but acid driven, food friendly, structural Cabernet that can age with grace and grow more beautiful or be consumed now with equal glee. Also the winery has never forgotten its long and storied history and has held true to a style for five decades; that is a rare feat in the wine world indeed. Without much fanfare, the Heitz wines rarely get much press, this 2007 Napa Cab has been one of our top selling mid-range wines over the last year. Savory and packed with sandalwood, olive and red currant in the nose it about as “varietal” as Cabernet gets. With a long and drawn out nature and little in the way of excess this is a Cabernet that is stripped down, or I’d prefer to think not over made, with layer upon layer of bay leaf, sage, Kalamata olive and dry but fruity tones of cherry, raspberry and black currant with great oak integration and a long resonating finish. I challenge you to find a better $40 Cabernet from Napa with better pedigree and repeated quality, it just doesn’t exist.

Heitz hits the target right in the bull’s-eye with their 2007 Napa Cab. The lines are classic; it packs plenty of cedary, dusty, dark fruit on the nose, for instance, but keeps to a drier style, avoiding the confected ripeness that one often finds these days. This holds for the palate as well, where balance is the first word that comes to mind. While it doesn’t lack for flavor, it doesn’t shout at you from the rooftop. A further felicity is that the wine is drinking about perfect right now: who doesn’t like a little immediate gratification?

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.
