Marc Ollivier's Muscadets are some of the best wines from this AOC, tasty in their youth and ageworthy too. Ollivier takes his time, even leaving this, the "entry level" Muscadet, on its lees for an extended period of time to accentuates the wine's inherent crispness and add complexity. This is a classic oyster wine, but would be delicious with Santa Barbara spot prawns, California spiny lobster, Dungeness crab or other local seafood.
