The 2010 Chablis Vaillons is another striking wine endowed with breathtaking purity in its pure, crystalline fruit. The oak is beautifully integrated. Sweet minty notes wrap around the textured finish. The Vaillons was aged 20% in oak. Anticipated maturity: 2014-2022. (8/ 2011)
*Outstanding* A discreet touch of wood frames a notably complex and densely aromatic nose of white flowers, wet stone and sea breeze nuances that introduces rich and generous middle weight flavors that manage to retain a fine sense of focus and balance on the punch, long and lemon-inflected finish. Like the Vosgros, this is not a wine of refinement but the depth is impressive. (10/ 2011)
(from the second bottling, in January of 2012): Bright straw-yellow. Reticent aromas of citrus fruit and saline oyster shell minerality. Begins juicy and penetrating, with a distinctly taut quality to the citrus and steely mineral flavors, then shows a creamier aspect toward the back. Very fresh Vaillons with a long, spicy finish.
