This very small production of Pinot Blanc is only bottled in half bottles (375 ml) and Magnums (1.5L) because, according to the folks at Robert Sinskey, "you should either start with it, or party with it... there is no in-between!" This 100% organic and biodynamic Pinot Blanc was fermented in stainless steel to preserve its natural freshness and pure varietal character. The delicate peachy aromas and flavors and creamy richness on the palate balanced by clean acidity make it the perfect pairing for fried seafood or fish dishes. It also complements exotic seasonings well. Try it with New England style crab cakes with lemony mayo or Baja style crispy fish tacos. With production down almost 40% this vintage, don't expect this tasty little bottles to be in stock for long!
