Salted lime with prominent zest and pip characterizes the refreshing, invigorating, and aromatically pungent Pabiot 2010 Pouilly-Fume Aubaine. There is even a nip of fresh radish to this bracing performance, which even though it’s more single-minded than complex, displays formidable, vibrant persistence as well as an admirable overall combination of density with vivacity and clarity. “The lees were really clean and healthy,” remarks Pabiot by way of explaining how such a combination was possible. One of several Pabiot family labels in Pouilly-Fumé, Jonathan is the son of Didier Pabiot and was given two prime hectares of vines from his grandfather in 2005. An up-and-coming star winemaker, Jonathan makes the "Aubaine" bottling as one of his two high end cuvees.
