Light yellow. Lemon zest, pear and melon on the bright, sharply focused nose and palate. Racy and linear on entry, then fleshier in the middle, with strong back end cut and punch. The sappy, lively finish clings with impressive tenacity and leaves floral and mineral nuances behind. (12/ 2011)
This racy, zero-dosage Champagne is full of high toned citrus and minerals and makes a great partner for sushi. Champagne Devaux was founded in 1846 and has been owned by the growers who supply it since 1986. It is composed of half and half Pinot Noir and Chardonnay, and it is aged for five years on the lees. The reserve wine, which makes up half of the blend, is fermented and aged in large oak barrels. Since this Champagne has absolutley no sugar added it is among the very driest that we stock.
