Olema is produced by the folks at Amici Cellars. Their Chardonnay blends fruit from the Russian River and Carneros, fermented and aged in a combination of stainless and French oak barrels. A little more than half the juice goes through malo, creating a wine that still has lift and acidity, but is rich and textured on the mid-palate and finish. Oak spice complements the cooler-climate Chardonnay fruit's apple and citrus aromas and flavors.
