Bright dark red. Complex, lively aromas of cherry, licorice, chocolate, tobacco leaf and spices. A juicy, spicy midweight with excellent tension and finesse to its youthfully imploded fruit, spice and chocolatey oak flavors. A very successful offering from Silver Oak, finishing with substantial dusty tannins, noteworthy length and a light touch. Aged for a full two years in 100% new American oak, but the oak element is not at all overbearing. (5/ 2012)

2007 is a classic vintage for Napa Valley Cabernet. Wine Spectator rated the overall vintage 99 points! The only other vintage to ever receive a near perfect score was the legendary 1997 vintage. In addition to the Wine Spectator's assessment of '07, Robert Parker has rated the 2007 vintage higher than the legendary 1997 vintage for California. Now these are all reviews on the overall vintage and not specifically Silver Oak. This new '07 Napa bottling from Silver Oak is brand new and not reviewed. But as one of the icons of the Napa Valley, Silver Oak's Napa release will sell quickly and certainly garner plenty of praise from the critics. If you want to round out your Napa Cab collection, or perhaps, for somebody special, you'd like to pick up one of most frequently requested luxury gift items we sell each year, it would be wise to act quickly while this remains available.

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.
