Made by one of our favorite Chinati producers, this spicy oil is made almost exclusively from Coreggiolo olives (plus 10% Moraiolo) manually harvested off the Montegrossi estate. It has vegetal, artichoke-like notes, plus a lightly sweet hint of apple. Velvety on the palate. If you're looking for a good finishing oil for pasta, fish and salads, this is it.
