This is a rare bird: a pure Chardonnay Champagne from the Aube, where Pinot Noir is king. The gentle rolling hills of Gye-Sur-Seine do not ensure against frost as well as the steep slopes of the Côtes de Blancs do, and the warmer spring climate here encourages premature budding of the vulnerable Chardonnay. This rarity is a treat, with a very open nose that is full of flowers. On the palate, it is quite ripe, not from sugar however, and the finish is dry by contrast. Like all of the Fluteau wines, it is fermented in stainless steel and goes through complete malolactic fermentation.
