Ridge Distillery takes exquisite care to use only the most exceptionally high quality herbs and their recipe for traditional absinthe Verte is rich, complex, and appealing. From the Sprits Journal: " *Highly Recommended* Pretty olive green/yellow color; unblemished clarity. Initial whiffs detect plenty of assertive but not overpowering herbaceousness/woodsiness; after another seven minutes of exposure to air, the bouquet settles in featuring pleasing layers of marshmallow, anise/licorice, dried sage, gum and spring forest vegetation. Entry highlights a buttery oiliness that displays the herbs and botanicals very nicely without the high abv getting in the way; mid palate is richly textured, intensely herbal (the dried sage is off the charts good) and properly spirit. Finish closes the circle well with a rush of black peppercorn spikiness that’s fitting. Good job here in capturing the essence of absinthe." (03/2011)
