As its name indicates, this champagne has been left to age on the lees a minimum of three years. The extended time on the yeast gives it a robust, creamy texture. The blend is majority Pinot Noir (85%) with a touch of Chardonnay. It's a beautiful golden yellow with an abundant effervescence that provides a lovely bead and a fine, persistant stream of bubbles. A complex, refined, fruity nose with notes of peach marmalade combined with fresh raspberry, bergamot, honey and licorice.The Pinot Noir dominated palate is rich and fruity with a finish of yellow fruit. A hint citrus coming from the Chardonnay on the mid-palate and a note of licorice on the finish. This perfectly balanced Champagne is a great choice for an aperitif, but will also show well with heartier foods.
