This is one of the best, freshest, most representative lighter style finos around. Gutierrez Colosia enjoys a prime location in El Puerto de Santa Maria, which, due to the cooling influence of the Atlantic, allows for the development of a healthy layer of flor year-round to protect their soleras and contribute the tell tale salty, slightly almondy notes to the wine. For any fan of bone dry, mineral white wine who has not tried this, you should surely give this one a go - I would be hard pressed to find a tastier aperitif. While this is obviously a perfect accompaniment to Spanish tapas, it is also delicious with a simple Chinese stir fry or Japanese cuisine. (Joe Manekin, K&L Spanish Wine Buyer)
