This salty Amontillado has the fragility and freshness of a Fino up front, before nutty and earthy flavors take charge. Still, that sensation of delicacy makes it an excellent aperitif. (6/ 2011)

El Maestro Sierra is a terrific boutique sherry bodega in Jerez de la Frontera. Originally founded by a master carpenter, Jose Antonio Sierra, who was in the business of creating barrels for other sherry bodegas, El Maestro Sierra is now owned by three women. That's right, in this very male dominated segment of the Spanish wine business, three women call the shots! El Maestro Sierra has terrific older soleras, as well as this wonderfully salty, tangy, nutty amontillado, averaging 12 years of age, though there is certainly some older wine blended in as well. A real treat before a meal, or served with a first course; a lobster bisque would be classic though a rich French onion soup would likely be quite tasty as well.
