Pale gold. High-pitched aromas of lemon, green apple and honeysuckle, with a strong mineral overtone. Taut, focused and pure, with very good clarity to its sappy orchard fruit and citrus zest flavors. The floral and mineral notes repeat on the brisk finish.
With zero dosage, this is obviously a very dry Champagne. But such is the richness of its fruit that it tastes ripe and rounded, allowing the citrus bite to fit well with the apple skin flavor. It could age a year.
Well-balanced, with a subtle, lightly creamy mousse and a hint of bread dough accenting flavors of yellow plum, kumquat, blanched almond and fresh ginger. Stony finish. Drink now through 2018.
