Billecart-Salmon Extra Brut Champagne
Stephen Tanzer's International Wine Cellar
(45% pinot meunier, 40% pinot noir and 15% chardonnay, with no dosage; L349232): Pale yellow. Fresh pear, lemon rind and jasmine on the mineral-inflected nose. Spicy, penetrating and pure, offering zesty pear skin, blood orange and bitter quinine flavors complemented by deeper notes of melon and peach pit. Dry but distinctly fruity, finishing with strong thrust and mineral-driven persistence.
With zero dosage, this is obviously a very dry Champagne. But such is the richness of its fruit that it tastes ripe and rounded, allowing the citrus bite to fit well with the apple skin flavor. It could age a year.
Well-balanced, with a subtle, lightly creamy mousse and a hint of bread dough accenting flavors of yellow plum, kumquat, blanched almond and fresh ginger. Stony finish. Drink now through 2018.
At K&L we love the trend toward zero-dosage Champagnes. This one hails for the hallowed house of Billecart-Salmon, super-famous for its rosé bubblies. This is their non-vintage blend of Pinot Meunier, Pinot Noir and Chardonnay. Dry, yes! And great with food.
