Clean and fresh, with a soft inner sweetness to the botanicals, you smell the aromatics of this gin, not the alcohol. It drinks very harmoniously, too, and the flavors have nice length. In fact, this is one of the few gins that I no qualms sipping straight, at room temperature; an action I usually find more informative than pleasant. No bravery is required in this case. A couple of ice cubes and a glass may be all you need to enjoy it. A martini made with the Greylock is fantastic-it almost drinks itself. Now, given that the subject of storied old drinks like the martini rouse strong passions in the breasts of its devotees, I am not making so bold as to say that this a definitive version of the cocktail-there are as many “best” ways of making martinis as there are drinkers of them. I will say, however, that anyone interested in newer gins would be doing themselves a favor in checking the Greylock out. While it is made along London dry lines, with juniper up front, the spirit has an easy, low-key charm that is seductive and attests to considerable skill and care on the distillers part. If you’re looking for gin that’ll stand up to a passel of other ingredients all thrown together in one drink and not get lost in the mix, you might want to look to another gin. For drinks where the spirit needs to on its own with minimal enhancement, this is truly charming.
