Laureano Serres is one of Spain's most vocal proponents of natural wines: wines produced from carefully, organically tended old vines, whose grapes are then picked by hand, and gently pressed to yield fresh juice which is then fermented with native yeasts, and without the addition of sulphur at any point of the winemaking process. This particular bottling of Macabeu, which ages under a thin layer of flor, was allegedly so good that Laureano's importer wrote a one word email expressing his excitement for the wine: "Yes!!!" So that is the name of this delicious white from the Terra Alta region in the southern section of Spain's rugged Catalunya region. Try this wine with cheeses, seafood dishes and even Chinese cuisine, where dry, sherry style wines often do surprisingly well.
