Doesn't quite have the briskness of the 2002, but there's more mid-palate ripeness to support the solid tannic structure and the finish is sweeter. The once up-front tannins and oak in this wine have mellowed considerably, yielding a complex and highly enjoyable wine to drink today. Earthy and savory notes add dimension to developing blackberry fruit and currant flavors. Hints of earth spice and smoke linger on the finish. It would be great paired with a number of dishes, from slow-cooked, roasted, or smoked meats with "saucey" side dishes (like Argentine Matambre with chimmichuri sauce) to slow-cooked (meat or meatless) Indian or Morroccan dishes.

Beautiful, dark, nearly opaque ruby core with a much brighter rim variation...

Minerally nose with a sort of anise seed note, I also get plenty of oak and a sort of "chemical" component...

The palate is big and juicy, black currant, blackberry, and perhaps a bit of black cherry ( I guess that's what they mean when they say "black fruit")...tannins are pretty big, but fairly well rounded (perhaps the result of some extra age int he bottle???) Just a slightly bitter, almost "charcoal"quality under the surface, and the slightest bit of cigar box/humidor...

The finish has a fruity sweetness mixed with an almost tamarind tangyness and a pleasant cocoa bitterness...I also detect a faint cinammon quality...

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.
