2007 Trabanco Poma Aurea Sidra de Asturias

This is a rare treat, a sparkling cider, re-fermented in the bottle, produced in the cool, northerly region of Asturias. Initial fermentation was in 50 year old chestnut barrels using only indigenous yeasts. Secondary fermentation occured in the bottle also using indigenous yeasts. Pure apple must was used for the dosage. Aromas are fine and appley, which lead to a very soft palate and fine bead; this comes across almost like a fine French cremant, only made from native Asturian cider apples.
