It doesn't get much drier than this in rosé wine, much less wine in general! But raciness doesn't come at the expense of flavor and nuance. There is a very distinct red berry note in the mid palate that elevates makes you take this minerally, tangy, almost saline wine a little more seriously. It is and outstanding match with shellfish that is prepared with a little gusto: barbecued oysters with tobasco, Peruvian ceviche, Spanish "pulpo" (cooked octopus seasoned with paprika, garlic, and black pepper), or spicy flash-fried Vietnamese calamari. Lower in alcohol, this rosé is perfect for picnics or to accompany appetizers, and meant to be drunk young and fresh.
