 The finest Goulee to date, the wine has an opaque purple color, a glorious nose of creme de cassis, blackberries, forest floor, and some subtle charcoal, and fabulous fruit on the attack, mid-palate and finish. The wine is opulent, even viscous, with unreal concentration and a full-bodied purity and texture. This wine simply over-delivers at every stage of the tasting experience. It is definitely a candidate to buy by the caseful and drink over the next decade or more. This is a major sleeper of the vintage. Created by Cos d'Estournel's winemaker Jean-Guillaume Prats and proprietor Michel Reybier, this wine represents 90,000 bottles of absolutely remarkable claret made from a blend of 80% Cabernet Sauvignon and 20% Merlot that has been lavished with the same attention and care that Cos d’Estournel receives.  (from gravelly soil in the northern reaches of the Medoc): Bright medium ruby. Aromas of black cherry, cassis and licorice. Dense, layered and sweet, with a lush texture and noteworthy concentration to the slightly high-toned flavors of blackberry, cassis and licorice pastille. Harmonious acidity energizes the mid-palate and extends the rising finish, which features firm but ripe tannins and a saline nuance. The best vintage yet for this top value made under the direction of Jean-Guillaume Prats and Michel Reybier, respectively the manager and owner of Cos d'Estournel.  (7/ 2012)

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.
