(Review for #10) The partners at Navazos selected this Manzanilla Pasada from Bodega La Guita. Its salinity combines with the light oxidative touch of a wine that's close to 15 years old. That's the base from which the nutty and spicy aromas build, leaving just a little room for a touch of toffee. The flavors are directly salty, with scents of limestone enveloped in their expansive power, lasting with an energy that predicts this will continue to evolve for years in bottle.
The most recent saca of this famed Manzanilla Pasada (#30) is sourced, just like the two previous sacas (#10 and #20), from a solera begun in 1986 at La Guita. Equipo Navazos consists of a partnership between Jesús Barquin and Eduardo Ojeda. The proprietors use their connections in the Sherry trade to pick some of their favorite barrels from a small group of top bodegas. These barrels are then bottled with the lightest of filtrations, and the resulting wines are truly outstanding and distinctive versions of their respective style. They are also capable of improving with bottle age. Here the average age of the wine is 15 years. Since the layer of flor is so thin at this point in the wine's development, the barrels are kept much fuller than the usual 5/6 typical of the region. Intense and complex beyond belief, this wine will only continue to improve with some bottle age. Limited and not likely to last long. Jancis Robinson awarded #10 a near perfect score, remarking that this is "a connoisseur's selection to change anyone's mind about Sherry...a Chevalier-Montrachet of a wine at a Puligny village price."
