Moulin de la Gardette's cuvée Ventabren is a wine that ages gracefully, showing fruit and spice in youth and developing more character and complexity with age as the oak recedes. This latest 2006 cuvée is composed of 70% Grenache from very old vines, 20% Syrah and 10% Cinsault, with the latter fermented together. Fermentation is long and slow, utilizing natural, wild yeasts. Following 12 months ageing in old Allier oak barrels and another 6 months in tank, the wine is lightly filtered and then bottled with a minimum of sulfites added. Open the Ventabren in advance and decant to allow it to breathe - you'll not be disappointed! After an hour or two of decanting it will best be enjoyed with heartier dishes like garlic studded leg of lamb or roasted rabbit with flageolet beans. 14.5% abv.
