I have to say that in my opinion Saisons are the most underrated of all beers. Just my two cents. As one of my fave styles I wish more people would be into them. But until then I'll do my best to support the great ones out there. This is what a saison should pour like. Cloudy with floaties bouncing around the glass. Strong streams of carbonation persistent through out. With a uniform, dense head that persists and will come back with the slightest swirl of the glass. Spotty lacing on all sides that stick in place until they are disloged by more of the beer sliding into your mouth or receding back into the glass. Aromatically the first wiff is of vanilla and mint, but then the dry hopped character kicks in and pitches hay and alfalfa with some mild citrus tomes. A funky brett-like quality is laying dormant underneath, just enough to remind you that this is no APA or IPA but a Saison first and formost. Stone, earth and the lower register of citrus are all apparent here. In other words this is the perfect, slightly bitter, but completley vibrant Saison. The palate is meshed tightly not wanting you to dissect what is going on. But flavors of honeycomb, preserved lemon, saffron, vanilla bean and yeast are all bouncing around my tounge. I had this with a 5 meat torta and it was killer, something about the mayo/jalapeno combo and this really got me fired up. (Bryan Brick, K&L)
