2 Glasses Gambero Rosso. Garlider is a husband-and-wife organic farmstead in a tiny alpine village nestled in the northerly reaches of Alto Adige. This white is Sylvaner at its steely finest. Sylvaner grapes are hand-picked during the last week of September, destemmed and crushed into a pneumatic press. The resulting must is fermented into stainless steel vats at controlled temperature, with ambient yeasts, and it is then racked into Acacia oak casks where it matures on the lees up until June following the harvest. Bright and focused, with citrus fruit and a long, acid-rich finish. Great as an all-around white at the table, this is also delicious on its own as an aperitif.
