Demoiselle "Tête du Cuvée" Brut Champagne
A focused Champagne, offering tightly wound flavors of toast, honeyed apple, lemon peel, white pepper and ginger. Smoky, with sophisticated polish and a fresh, lightly floral finish. Drink now through 2021.
The style of this creamy wine seems to have become drier, giving a steely tight character to go with the apple and citrus flavors. The result is attractive, very fresh, ready to drink.

Yellow-gold. A fruity, aromatic bouquet evokes ripe pear, melon and tangerine, with vanilla and floral notes adding complexity. Plush honeydew and orchard fruit flavors are lifted by gentle acidity and show a subtle spiciness. Notes of vanilla and floral honey linger on a long, juicy finish. Not the most complex Champagne but I find it extremely easy to drink and would serve it with spicy Thai seafood dishes.
The Demoiselle Tête du Cuvée Brut Champagne is composed of 80% Chardonnay and 20% Pinot Noir and goes through primary fermentation in 100% stainless steel. It completes malolactic fermentation in stainless steel and is then bottled and aged for three years on the lees. The Champagne is quite golden in color, with a touch of green from the high Chardonnay content and has a decadent, generous nose that the Pinot dominates. Flavors of buttered toast, apples and even a bit of chanterelle mushroom unfold on the complex palate. This is very vinous, potent Champagne with quite a bit of length.
