Organic! This is a party wine without equal, and owes its tremendous bouquet to 100% Muscat grapes (most Clairette de Die contains Clairette grapes, which creates a much lighter juice than Muscat). After the grapes are pressed, the juice is refrigerated and the half-fermented must is bottled. Fermentation continues in the bottle from the natural sugar in the grape. After fermentation in bottle in an air-conditioned cellar, the sediments are eliminated by riddling. Carbonation is produced exclusively by fermentation. The Grande Tradition Clairette is very expressive and persistent, and is wonderful with foie gras and ideal for all desserts. 7.5%abv. (Mulan Chan-Randel, K&L Rhone wine buyer)
