From Robert Parker's "Value Issue:" "The 2005 Cabernet Sauvignon from the Amber Knolls area is a good value Cabernet showing black currant fruit with some cherries, spice, and earth. This is an attractive wine with good ripeness and certainly a fair price. These are value-priced wines from one of the Beckstoffer family who has planted vineyards up in Lake County." (Aug. 2008) Seventy Five Wine Company is the priced-for-consumption label from Tuck Beckstoffer, revered vineyard manager and winemaker. The Beckstoffer family purchased Lake County's "Amber Knolls" vineyard in the late 1990s after determining the climate and soil perfect for ultra-premium cab. Bright fruit balanced by spice and youthful tannins, Robert Parker scored the last vintage of this wine 90 points.

Ours is a staff that rarely reaches consensus. We all have different palates, with distinctive flavor preferences, regional proclivities, etc. We absolutely reached a consensus on terrific everyday Cab, however. Here it is, courtesy of the Beckstoffers, long time Cab growers in Napa Valley. Red fruits, the slightest hint of herbal cab savor, great structure and real guts. Here’s an ideal house red for Cab fans.

This wine is a rare find - a California Cab for less than $20 that tastes like it was made in the heart of the Napa Valley. While not as forward in style as the 2004, the 2005 shows even greater complexity and concentration. This is textbook Cabernet Sauvignon – enticing black currant on the nose, bright blackberry fruit and rich cassis in the mouth, and a smooth and silky finish with dusty tannins. Because I am a professional I refrained from licking the last few drops from my glass when I had this wine at home. But if there had been a second bottle on the table I would have opened it. Try a bottle tonight and taste for yourself. You deserve to drink the best and at $16.99 you can afford to.

From the renowned Beckstoffer family, this cabernet is a real treat. I am super picky about domestic cabs and, to be honest, don't like overextracted wines. The Seventy-Five Wine Co. cabernet has lush, dark cherry ftruit but, also has spice, light tannin and earth to liven it up. Balanced and extremely enjoyable. I can't recommend this wine enough, particularly at this price!

Yummy and gummy, pair with mediterrean meat dishes or spice to hold up to its chewiness.

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.
