An intense and earthy grappa from Steve McCarthy's Clear Creek Distillery in Oregon. Because winemakers really press the juice out of the pinot gris, this was an incredibly difficult grappa to make. The pomace was exceptionally dry, making it difficult to ferment. The distillation process extracted very little grappa, resulting in a robust liquor that opens up beautifully in the glass and finishes surprisingly clean.
