Napa veteran Cathy Corison has crafted a blended wine of beauty and power. Compared to her Kronos bottling, this Cab is for immediate consumption, although it should hold well for some years. Bright ruby-red. High-pitched nose reveals cassis, violet and licorice...Brisk, juicy and youthfully tight, but possesses good density and sweetness. Flavors of dark berries, boysenberry, licorice, mint and leather. This should age slowly and well. (6/ 2004)

Grown on the western benchlands around Rutherford, this distinctive wine takes time to show itself. At first, the black scents of reduction mask the detail, but as they dissipate with air, spices emerge, as does a fine red cherry flavor. If you open the bottle soon, decant it and serve with grilled quail. It should be drinking best from 2009 through '12. (12/ 2005)

This, for me, is the way Napa Cab should be made: deep, complex, and savory, with notes of spice and herbs, polished tannins, not over-ripe...and not over-priced! It will be my go-to for my next special occasion dinner when I want an exceptional Cabernet to show well yet drink better than younger Napa Cabs. It could use another 3 to 6 years of cellering, though, if you prefer less primary fruit and relaxed grip in your Cabs. Highly recommended!

I think in perhaps 5 or 10 years we will be talking about the 2001 vintage as one of the best of the decade for Cabernet Sauvignon in California. The 2001 Corison Napa Valley Cabernet Sauvignon represents a unique opportunity to purchase a great 10 year old Napa Cab, perfect to drink now or cellar for another decade. These few cases were purchased directly from the winery, and are available at only a slight premium above the price of the current release, 2007. As much as I love the Corison wines (even the Gewürztraminer - I know, right?) I couldn’t resist bringing a bottle home to try. When I pulled the cork the wine’s aroma immediately filled the room, wonderfully floral like freshly picked violets. On the palate bright blackberry and cherry notes with a little hint of cocoa and spice; the oak is subtly applied and beautifully integrated. Tannins were quite firm when the wine was first decanted but softened a bit with air. The wine is really quite lovely now but can only get better with age. Patience will be rewarded.

It's always a special treat when you find that one wine that makes you do a little happy dance inside and smile with joy...and the '01 Corison Napa cab does that for me! When you're used to evaluating numerous wines on a daily basis, its sometimes hard to separate yourself from the analytical side and just take a step back but when you taste the 2001 Corison, you're immediately reminded of what great wines are supposed to do...to be enjoyed with immense pleasure. Caution, this wine is only to be opened with those who can appreciate its true beauty and balance!

"I had this wine for the third time recently on our trip to Napa and each time it appeared to show even more depth and character! The nose is full of floral and red berry notes. Bright fruit still shines in dark cherry, currant, black and red berry forms with hints of leather and cola to round out the complex palate. This wine is still youthful in all aspects and should progress nicely for quite a few years. This has easily been my first pick for anyone looking for a nice older wine (as are any of Cathy Corisons' wines that arrive in store through our Old and Rare program)."

Cabernet Sauvignon and Blends

- Cabernet Sauvignon has come a long way from its role as a blending varietal, however dominant, in the wines of Bordeaux. Today it is the most planted red varietal in the world. Identified as a descendent of Cabernet Franc and Sauvignon Blanc, the late-ripening Cabernet Sauvignon needs to be planted in warmer climates to fully ripen. Its small berries can easily be identified for their distinctive blue color, thick skins and high tannins. And while the varietal has its own definitive characteristics: green pepper-like aromas and black currant flavors among them, it is perhaps most prized for its ability to convey terroir, vintage and winemaking. A relatively new varietal, Cabernet Sauvignon started making inroads into the wines of the Médoc and Graves in the late-18th century. Today it is also dominant in the up-and-coming Entre-Deux-Mers region of Bordeaux and can also be found in Southwest France. It is the companion varietal to Sangiovese in Italy's Super Tuscans and is planted all over Europe, stretching to lesser-known winegrowing regions like Russia and Lebanon. In the Americas Cabernet Sauvignon has found champions in every nook and cranny of California and among winemakers in Washington, where it complements plantings of Merlot. In South America, Cab thrives in Chile, but can also be found in smaller amounts in Argentina and even in Mexico.
