Light, bright yellow. Lime, lemongrass and chalky minerals on the nose and palate. Dry and precise but not austere, displaying very good vivacity and focus. Finishes with very good energy and cut, the citrus and mineral notes echoing. I'd love to drink this with sashimi.
The Laurent Perrier Ultra Brut is one of the very few Champagnes shipped naked, with no dosage (finishing sugar) at all. It is a very special blend, made only from exceptionally ripe harvests. This cuvee is based on the 1999 vintage, although not labeled as a vintage, and is composed of half Chardonnay and half Pinot Noir from exclusively grand cru vineyards. This Champagne is dry and precise without being strident or harsh. It has great chalky grip, a rich underlying yeast quality and finish that goes on forever. It is especially fantastic with sushi!
