What an intriguing wine! The Valettes are known for the extensive barrel aging of their wines, which comes through quite distinctively in the 2001 "000". This has a heady bouquet redolent of aged Parmigiano-Reggiano, with an undercurrent of lime and caramel that carry over to the palate. But what's so remarkable is that despite the secondary aromas on the nose, this wine is lively and fresh in the mouth, with hints of anise, delicate fruit and nuts awash in gorgeous bright acidity.
