This fantastic Champagne was made by De Meric as a tribute to Mr. Rene Collard, and it is one of the greatest Champagnes that we stock at any price. It is made exclusively from biodynamic meunier from the village of Crouttes-sur-Marne in the western part of Champagne. It was aged in old, small oak casks before bottling in 2003. This Champagne is a blend of 50% Pinot Noir and 50% Chardonnay from organic, estate vineyards. Mr. Brulez sells two-thirds of his grapes, and keeps the best third to make only vintage Champagne. He is the chairman of the Dijon University Alumni Association, and looks more to Burgundy than to Reims for inspiration. Champagne Fleury has been around since 1895, releasing their first bubbly in 1929. The vineyards themselves are located on steep slopes that have a calcareous clay soil and see ample amounts of sun, so the grapes have an outstanding ripeness. Continental and oceanic climates combine for cool mornings and nice bursts of heat in the afternoons. Fleury was one of the first vineyards to start converting to biodynamics, beginning in 1989, completing the process for all of their vineyards by 1992. There is not much more festive than a magnum of Vintage Champagne. The fact that this is meticulously crafted, and heavily discounted, makes it a particularly fun addition on your holiday gatherings!

While the renowned 1996 vintage Brut from Fleury has taken much of the acclaim, the 1995 is not to be overlooked. Even at this point, the 1996 is still tight while the 1995 expands upon the palate with bright, tart cherry fruit with hints of mandarian oranges when it is first opened. In the background, stone fruits, apple butter and nutmeg spice. As an added bonus, Fleury Champagne is biodynamic and has a long history of "green" farming methods. This spectacular Champagne is made from one plot, the "9 Arpents" in the village of Moussy. This vineyard is all Meunier, and the vines are 70 years old and pre-date the arrival of cloned vines in Champagne. This wine was fermented in old oak, and aged for a year in oak before being bottled. It has a deep straw color that is almost gold and a nose of morel mushrooms in cream and moist forest floor. The word lush might best describe this wonderful late harvest Gewurtz. According to Robert Parker's Wine Advocate: "Jean Schaetzel, this estate's winemaker and a professor of oenology in Rouffach, was off teaching a class so I had the pleasure of tasting with Bea, his charming wife. A biodynamic winery (they've been accredited as such for three years), Domaine Martin Schaetzel's wines are of considerable quality yet not well-known. Consumers should take advantage of this." One of the last available of this great vintagemaybe the greatest in a generation from one of K&L's favorite Champagne producers. An recently disgorged (RD) release; it is STUNNING. The 1996 vintage blends 80% pinot noir and 20% chardonnay fermented in stainless steel and measures a very high 6% total acidity, even after full malolactic fermentation. The sur-lie aging takes place on a cork rather than a steel cap, and all the bottles are hand-disgorged. Bruno Lemoine of Fleury packed this in, along with his Doux and regular Brut of the same vintage for our two-city Champagne tasting event. Tasting three vintage Champagnes, identical except the dosage, is a rare treat for me and a first for many that came to our tastings. Fantastically full-bodied, bone dry at one 3.5 grams of sugar per liter, and with contrasting flavors of mushroom and chalk, I think this wine has it all.
