Although not labeled as vintage, this Champagne is entirely 2008, and made from the oldest plots on the estate. Curiously, Paul-Vincent thinks that old vines should never be used to make vintage dated wine, because they tell more of the story of the land than of year, with deep roots protecting the plant from the vagaries of the weather. It is composed of 50% Chardonnay, 25% Pinot Noir and 25% Meunier and has a powerful, concentrated character that goes very well with charcuterie and other rich appetizers.
