This fantastic Champagne comes from the villages of Pierry and Moussy. Bruno Michel has been organic since 1999 and five of his 37.5 acres are farmed biodynamically. Jancis Robinson: "100% Pinot Noir. Dosage 9 g/l. Mostly from 2006 with a bit of reserve wine from 2005. The faintest hint of pink. A fruity nose and chewy, chalky, substantial red-apple fruit on the palate. Lots here and good for the money. A champagne for food." This fantastic Champagne comes from the villages of Pierry and Moussy in the sud-Epernay sub-region of Champagne. Bruno Michel has been organic since 1999 and five of his 37.5 acres are farmed biodynamically. A saignée rosé, this elegant bubbly was made by a very short cuvaison of Pinot Meunier. Spicy and full-bodied, it is a great example of a sparkling wine that can be enjoyed with dinner, even red meat!

This is Champagne Baron Fuente's little estate fillet, their biodynamic Galipettes. Farmed entirely organically, this is both Ecocert and Demeter certified. Like the rest of the Baron Fuente Champagnes, this wine gets plenty of time on the lees: four years. It is composed of 20% Chardonnay, 10% Pinot Noir and 70% Meunier, entirely from their estate. Barrel-fermented Chardonnay, Pinot Noir, and Pinot Blanc, which is a real rarity in Champagne--it only exists in a few spots in the Aube and it adds a ton of body to this very rich wine. Fleury was one of the first to farm biodynamically in Champagne.
