2011 Domaine William Fèvre Chablis Grand Cru "Les Clos"
Bid on this bottle of 2011 Domaine William Fèvre Chablis Grand Cru "Les Clos" ((93-96BH), (93-95RP), (92-95ST)). Allen Meadows - Burghound: "(from 4 separate parcels totaling 4.11 ha, 3 of which are all at the top of the slope). This was quite closed and somewhat difficult to read but aggressive swirling grudgingly liberated ripe aromas of sea breeze, pear, lemon rind, oyster shell and mineral reduction plus an abundance of typical floral scents. The large-scaled flavors are overtly powerful and impressively concentrated as there is plenty of palate staining dry extract that also buffers the very firm acidity that supports and shapes the gorgeously precise finish. This explosively long effort possesses exquisite balance and the tightly wound flavors are going to need at least a decade to completely bloom. A knock out." (09/2012)

It's existed, more or less, since 1732, but mostly after the phylloxera epidemic, when Joseph Camus purchased abandoned vineyards. The vines for the Charmes-Chambertin are 40+-years old. The wines are not filtered, so you'll often find sediment, but this ensures that every iota of flavor from the grape makes it into the final wine.

Wonderfully stuffed for an Esmonin wine but with no excess weight--and not a hint of rusticity. Finishes very long and perfumed, with utterly fine-grained tannins. Robert Parker's Wine Advocate: "The 2012 Gevrey-Chambertin Vieilles Vignes comes from 60+ year old vines and also comes from several parcels towards the south of the village and from more limestone soils to the north. It includes 50% whole cluster fruit and the same percentage new oak. It has a very refined bouquet that unfolds in the glass – less immediate than the regular village cru – with very pure, mineral-rich dark berry fruit, with touches of flint and granite emerging with aeration. The palate is medium-bodied with a superb structure and sense of symmetry on the entry. The black fruit merges with red fruit during the second half that shimmers with tension on the crystalline finish. This is just an outstanding Gevrey-Chambertin that should age with style. Notes on Jadot's 99 vintage from Allen Meadows: "Jacques Lardière told me that the 99s have turned out much better than he originally imagined they would. When I asked why this might be, Jacques explained that the gentle pressing they did because of the large crop may have enabled them to realize especially fine raw materials. M. Lardière also noted that he did a lot of work with the fine lees to enrich the wines, giving them both additional flesh and texture. He thought the 99s might resemble the 79s, which were delicious young yet have proven to be exceptionally long-lived, especially relative to the predictions issued when they were originally released. Further, he is enamored of the purity and minerality that the best 99s offer, which when coupled with their healthy acidities, makes them extremely well balanced." (07/2001)

Robert Parker's Wine Advocate: "The 1986 is finally emerging from the dormant stage that many of the wines from this vintage (especially the Medocs) have been going through. It is a full-bodied, still backward wine that will appeal to classicists and old line traditionalists given its firm structure and austere tannins. Nevertheless, the color is a healthy deep garnet and the wine exhibits wonderful freshness along with notes of underbrush, damp earth, black currants, cedar and new saddle leather. Well-balanced with good depth, medium to full body, and a tannic (although not excessively so) finish, this may not be the most finesse-styled, elegant Lynch Bages ever produced, but it is an interesting Pauillac that will benefit from another 3-4 years of cellaring. Hervet notes that the Bienvenue parcel is actually lower on the slope than the Batard but that the wine is higher-pitched and finer, with less volume. Stephen Tanzer's International Wine Cellar: "The “Bollito not boiled” is one of Bottura’s classic dishes (seven different cuts of beef slowly cooked—for 36 hours—at a lower-than-usual temperature), while the “Beautiful, psychedelic…” veal creation is a far more modern Pollock-esque take on meat, but both match splendidly with Chave’s heavenly 1997 Hermitage Rouge. I’m not much for extremely rich, almost fat reds (and ’97 pushed the envelope) but this wine has aged magnificently and comes across as plush yet graceful, a neat trick. Cropped at a remarkably low 20 hectoliters per hectare and made from a blend of 80% Merlot and the rest Cabernet Franc as well as a dollop of Cabernet Sauvignon, the 2004 boasts an Ausone-like perfume of black fruits, crushed rocks, and spring flowers. In the mouth, it’s full-bodied, powerful, rich, pure, and beautifully layered. Bottled unfined and unfiltered, there are only 358 cases of this tour de force in garagiste winemaking. Highly complex aromas of blackberry, violet pastille, eucalyptus, leather and game. Wonderfully sweet but with terrific grip, even a touch of youthful austerity. Very classy, subtle wine with terrific inner-mouth energy. Builds very slowly on the back half, finishing with noble, fine-grained tannins and terrific grip. This makes the 1995 seem almost cooked by comparison. Still needs at least five or six years of cellaring.
