Out of a production of only 2,500 bottles, only 10 cases of this Extra Brut were allocated to the U.S. This wine developed out of dosage trials that Olivier Bonville performed while finding the right amount of sugar to add to the vintage. 2007 Michel Loriot "Les Sources du Flagot" Extra Brut Blanc de Blancs Champagne

This all-Chardonnay Champagne is very different from most that I have tried. Instead of coming from the pure chalk of the Côte des Blancs, it is all from Festigny, on the east facing slopes of the Flagot River that runs through the village. It has a pretty white-gold color and great focus and minerality that balance out its extroverted nutty, flowery flavors and aromas.
